This is a super tasty salad that we made for a New Years BBQ.
Honestly, so good. And it’s so satisfying when you can make something so colourful! (Skip to the end of this post to see the finished product, YUM!)
3 cups watermelon (diced into 2cm cubes)
1 punnet cherry tomatoes
1 telegraph cucumber (or 2 cups of your desired type)
1 punnet blueberries
2 tbsp fresh lemon juice
3/4 cup feta (diced into 1 cm cubes)
1 tsp pomegranite vinaigrette (typically use red wine vinegar)
1 1/2 cups flat leaf kale
2 tbsp parsley
1/2 cup finely chopped mint
4 tbsp cold-pressed olive oil
Place watermelon, tomato, cucumber and blueberry in a large bowl; lightly toss with lemon juice, vinegar and olive oil.
Fold through herbs and kale and serve on a plate or in a large bowl.
Scatter feta over salad, as desired.
This was so scrumptious!
Making this, was a good lesson in using what you have available (to a certain extent).
Original recipe replaces blueberries with the seeds from 1 pomegranate; kale with the equivalent value of flat-leaf parsley (making this a tabbouleh instead); and also adds salt and cracked black pepper for seasoning.
Either way, a tasty, tasty salad for this summer!
