1 cup sundried tomatoes (soaked 2 hours or more)
2 pitted dates
2 garlic cloves
2 cups cherry tomatoes or regular tomatoes
1/2 cup roughly chopped capsicum
1 tbsp fresh oregano leaves
1 tbsp cold-pressed olive oil
2 tbsp apple cider vinegar



Drain the soaked sundried tomatoes.
Place all ingredients in a blender.
Blend until mixture is smooth.

Extra info:
– I used sundried tomatoes that came in oil, so soaking them was a good way to separate the oil back out.
– I put in 5 pitted dates instead of just two, but not sure if it made much difference.
– I didn’t have any olive oil in the house and so used rice bran oil instead, end result still tasted great!
