1 3/4 cups cashews (soaked 2 hours or more)
1 tbsp lemon juice
2 tbsp nutritional yeast
1 shallot (or 1/4 of a large onion)
1/2 tsp sea salt
1/2 cup filtered water



Drain the soaked cashews and rinse thoroughly (I rinsed through about 5 times just to get most of the cloudy water away).
In a blender, blend all ingredients together (try to add as little of the filtered water as possible).
Blend until a light, fluffy consistency is reached.


Extra Notes:

– I used a little over two cups of cashews in the pictures, and so ended up using all of the water).
– Nutritional Yeast can be found at some Pak ‘n Save Supermarkets in the bulk bin areas, or at some Asian grocery stores.
