I stole the title from my friend who was describing these yummy fruit balls Matthew and I made for presents over Christmas.
Only 3… or 4 (if you include a coconut coating)… ingredients.
Super easy to make and assemble.
So without further ado, the recipe!
1 Cup Dried Fruit (We made 4 batches: apricot, cranberry, banana, fig)
1 Cup Dates
1 Cup Almonds
Shredded Coconut for coating (optional)
Place all ingredients (excluding coconut) in a food processor.
Process mixture until it starts to form one big ball (if it doesn’t form a sticky ball easily, add more fruit or dates).
Form mixture into 2cm balls (obviously, you can change the size according to what you want).
Coat balls in shredded coconut.
Chill in fridge to firm them, or serve immediately and enjoy the yumminess.
Mixture makes approximately 80-100 balls (this will vary with the size you make them).
You can also use this mixture and make it into a yummy slice. Just pack it down into a baking dish, coat the top with coconut, and slice.
